When Cupcake Met Mac ‘n Cheese: A Cupcake Project Contest

A few days ago, I decided to be adventurous and enter wikiKitchen in a contest I came across on Facebook. If you know anything about me and contests, you are probably rolling your eyes right now. I give credit to my mom for my competitive nature (She constantly emails me new contests to enter on a daily basis. I am not kidding.). Despite my usually bad luck with contests, I decided to give this one a try since I just had to simply submit my blog’s URL.

This contest was hosted by the infamous (at least to foodie bloggers) Cupcake Project, “an experimental cupcake blog” that has thousands of followers on Twitter and Facebook. For all of you non-foodie bloggers out there, the Cupcake Project blog has been recommended by The Food Channel and Kate Heddings, Senior Food Editor at Food and Wine, and featured in several publications like Shape Magazine, New York Times, and People Magazine, just to name a few. Stef, the blogger behind Cupcake Project, held the contest for food bloggers to submit their blogs so that she could choose a savory recipe from one lucky foodie’s blog and transform it into a healthy-ish savory cupcake for people to enjoy come New Year’s Day (a nice break away from the holiday sweets overload!).

To my surprise, Stef chose wikiKitchen’s Butternut Squash Mac ‘n Cheese recipe! If you haven’t tried this recipe already, why not try it in a cupcake liner? Or if you want to be really adventurous, try it cold out of the fridge like a leftover slice of pizza (Stef claims they taste great when cold, too!). Although I am bacon’s #1 hater (It’s a personal thing, not just a health thing. I know I am weird for not liking the taste of bacon!), Stef also suggests mixing bacon into the cupcakes. When Cupcake Met Ice Cream

Is there really any better way to start off summer than by making a dessert that combines two favorites: cupcakes and ice cream? I think not! Cupcake Project and Scoopalicious are holding an Ice Cream Cupcake Contest in which the winner gets a whole library of baking cookbooks. So what’s my concoction? PB&Bean Cuppies with PB Swirl Ice Cream: chocolate black bean cupcakes filled with a mini scoop of peanut butter swirl ice cream topped with peanut butter frosting, honey roasted peanuts and a tiny peanut butter cup. Struck by Cupid’s Cupcakes

Red velvet cupcakes: everyone’s favorite. They’re starting to appear all over now, even at Starbucks and Coffee Bean & Tea Leaf. The first time I fell in love with red velvet cupcakes was when I tried the SusieCakes Bakery recipe, which has frosting in the center of the cupcake (they are to die for!). As you can imagine, red velvet cupcakes can’t be the healthiest of desserts with that rich cream cheese frosting, so I went on a search for a healthy red velvet cupcake recipe. The result? A gluten-free cupcake with added fiber and protein. The secret ingredient? Garbanzo beans. (more…)
