June has finally arrived. That means it’s time for graduation, summer, and picnics! Picnic food has always been a favorite of mine. But really, what’s there to complain about when you’re munchin’ on Italian cold cuts, potato salad, macaroni salad, and watermelon?

Nothing really. Except for the fact that picnic food isn’t exactly the healthiest! Luckily, there are plenty of ways to make your picnics healthier. (more…)

Ah, the Taste of May: 5 Healthy Mocktails

It’s May, and it’s hot outside. Oh wait, no it’s not (at least not in SoCal)! Funny how it was perfectly hot and sunny outside when I photographed these refreshing mocktails way back in March. How’s that for some irony?

Anyway, it’s probably hot wherever you may be, and you’ll be needing some refreshing drinks to cool off after a long day, am I right? Not only are these mocktails refreshing, but they’re healthy (bonus points!) and don’t require a juicer (more bonus points!). Well, a juicer would be handy, but I got by just fine with a blender and some good old fashioned squeezin’. (more…)

Microwaved Eggs: Gross or Perfect for a Breakfast Tostada?

Microwaved eggs. If you just cringed at the thought of that, then you’re normal. If you’re like me, then you’d think microwaved eggs would be the perfect challenge to take on for Student Health 101‘s March issue: How to cook a fast but nutritious breakfast…using only a microwave.

To be honest, getting this assignment was a total bummer at first. How can I come up with a tasty, microwave-only recipe when I love experimenting with so many different kinds of tools in my kitchen? When I discovered it was possible to microwave eggs, I knew I wasn’t going to just settle on boring old scrambled eggs. Oh no, I was going to go big. I was going to attempt to make those oh-so delectable poached eggs with a runny yolk that bursts open when you puncture the egg white (If you love poached eggs as much as I do, then you’ll understand the satisfaction I take in doing this).
