Go Big or Go Home: Super Stuffed Taquitos

It’s almost Super Bowl Sunday, which, in my book, means that it’s Super Food Sunday. To be honest, I never even know who’s actually playing in the game; I just get excited about the food coma I’ll be slipping into after the game (but who doesn’t?). One of my favorite finger foods happens to be taquitos, so I thought it would be perfect to serve as a Super Bowl Sunday appetizer.

Unlike the usual deep-fried taquitos, this recipe requires baking the taquitos instead. Now I’m sure you’ve heard that it’s always better to bake instead of deep fry, but I bet you’re also wondering why that’s the case. Oils, especially the healthy ones, are rich in essential fatty acids (EFAs), which are fats that our body cannot naturally make. Deep-frying not only destroys the nutrients in oils, but it also turns EFAs into toxic products (yikes!). Therefore it’s always better to go with baking, which doesn’t destroy the oils as much.

…no, not usually, but today I did. Why? Because I can. The result? Mexican-style sushi. I was in a creative mood this week, so I combined what I believe to be the two most delicious gifts brought to this world: Mexican food and sushi.

What was probably the greatest challenge of putting this little creation together was making the brown rice into sushi rice material. Because brown rice is often harder and not as sticky as sushi rice, it is usually avoided at all costs. Luckily my idea to combine melted shredded Mexican cheese with the brown rice made it perfectly sticky for sushi. Brown rice really isn’t a gimmick; it truly surpasses white rice when it comes to nutrition. The oil in the brown rice helps lower cholesterol levels while its high level of manganese helps the body synthesize fatty acids and produce energy. Highly concentrated with fiber, brown rice also significantly reduces the risk of colon cancer. Even better, brown rice fills you up faster, so you won’t be tempted to eat too much of this sushi! Yo Quiero Healthy Bell: Ricotta Spinach Soft Tacos

Anyone who knows me well knows I have an obsession with Mexican food, particularly chicken enchiladas suizas. If I could, I would make Mexican food one of the main groups on the food pyramid. Unfortunately, Mexican cuisine is notorious for its high fat content thanks to knock off Mexican fast food chains like Taco Bell (did you know that Taco Bell is headquartered here in Irvine?). While it’s definitely tempting to walk across the street from school for a Mexican food-fix, I’d rather opt for my own healthier, easy-to-make version.

I was pleasantly surprised by this soft taco recipe I discovered during my search for healthy Mexican food. As Taco Bell would put it, this recipe “thinks outside the bun” (more…)
