Dear fellow dessert addicts of the world…

My healthy desserts video for Student Health 101‘s April issue may have been published on April 1st, but trust me, this is no April Fool’s joke. Although my blog is all about healthy eating, I’m human, too! I can relate to those times when you buy a pint of ice cream…just to realize that it will be gone in a matter of minutes.

Why is it that we crave sweets? The obvious answer is because our bodies require glucose for energy. But did you know that the refined sugars found in most desserts cause your body to deplete its own minerals and enzymes? This explains why we still feel hungry after eating sugar. Our bodies crave food to restore the nutrient balance! Sugar may leave us happy temporarily, but only to leave us feeling empty soon after. Bummer.

Good news! Quick and healthy desserts that are packed with nutrients do exist. Try out different fruits and nuts with these fro-yo fruits, dipped in healthy, nonfat Greek yogurt and frozen until perfection. They’re a cute dessert idea for a party, too!

For a healthy dessert that will give you a boost of energy (say, for a long night of studying), you should most definitely try an exotic açaí bowl. One of my personal favorites, this dessert is full of antioxidants for rejuvenating the body.

Fro-Yo Fruit Pops
Makes 1 serving

1/3 cup nonfat Greek yogurt
3 popsicle sticks (or skewers)

One of the following fruits:
3 fresh strawberries
1 banana, cut into 3 pieces
1 peach, pitted and sliced

One of the following nuts:
¼ cup pecans, chopped
¼ cup walnuts, chopped

Gently press a popsicle stick into each piece of fruit. Dip each piece of fruit into the yogurt, then roll into the chopped nuts. Transfer to a plastic container lined with parchment paper. Freeze the pops until they are frozen and ready to serve.

Açaí Bowl
Makes 1 serving

2 packs Sambazon Original Açaí
¼ cup frozen raspberries
2 tablespoons nonfat Greek yogurt
2 tablespoons almond milk
1 banana, sliced
Raw, unsalted almond slices, to taste

Blend the Açaí, raspberries, yogurt, and milk. Serve in a bowl and top with banana and almond slices.
