When Cupcake Met Mac ‘n Cheese: A Cupcake Project Contest

A few days ago, I decided to be adventurous and enter wikiKitchen in a contest I came across on Facebook. If you know anything about me and contests, you are probably rolling your eyes right now. I give credit to my mom for my competitive nature (She constantly emails me new contests to enter on a daily basis. I am not kidding.). Despite my usually bad luck with contests, I decided to give this one a try since I just had to simply submit my blog’s URL.

This contest was hosted by the infamous (at least to foodie bloggers) Cupcake Project, “an experimental cupcake blog” that has thousands of followers on Twitter and Facebook. For all of you non-foodie bloggers out there, the Cupcake Project blog has been recommended by The Food Channel and Kate Heddings, Senior Food Editor at Food and Wine, and featured in several publications like Shape Magazine, New York Times, and People Magazine, just to name a few. Stef, the blogger behind Cupcake Project, held the contest for food bloggers to submit their blogs so that she could choose a savory recipe from one lucky foodie’s blog and transform it into a healthy-ish savory cupcake for people to enjoy come New Year’s Day (a nice break away from the holiday sweets overload!).

To my surprise, Stef chose wikiKitchen’s Butternut Squash Mac ‘n Cheese recipe! If you haven’t tried this recipe already, why not try it in a cupcake liner? Or if you want to be really adventurous, try it cold out of the fridge like a leftover slice of pizza (Stef claims they taste great when cold, too!). Although I am bacon’s #1 hater (It’s a personal thing, not just a health thing. I know I am weird for not liking the taste of bacon!), Stef also suggests mixing bacon into the cupcakes. Coolhaus Holiday Party: Ice Cream Sammies, Drinks, & a Cranky Santa

Last night I got a chance to attend the Coolhaus/Eater LA Ugly Sweater Hot Chocolate Launch Storefront Warming Party at the recently opened Coolhaus storefront in Culver City (thanks to my mom’s winning hot chocolate flavor idea submission!). If you haven’t heard of it yet, Coolhaus is a new gourmet ice cream sandwich business that has flavor combinations named after famous architects and architectural movements. Wonder where the name Coolhaus comes from? It originates from the Bauhaus modernist design movement, Rem Koolhaas (a famous Dutch Architect), and “cool house” (which is what an ice cream sandwich basically is with a cookie roof and floor with ice cream walls).

As a college student, I often find myself getting tired of the narrow selection of dining locations available on campus when I need to grab a quick lunch in between classes (not to mention an even narrower selection of healthy options). Sure, I can name at least five different campus restaurants that specialize in sandwiches (hey, I even worked at one!), but my college-budget wallet and my body can’t handle buying those high-calorie sandwiches every day. When I was asked by Student Health 101 to produce a video about healthy lunches that students could pack for the day, I was quick to choose a sandwich that never fails to please: the Caprese.
