Breakfast is not my favorite meal of the day (I know it should be, but I am just not a fan of breakfast food!), so when I was asked to create a video about fast & nutritious breakfasts, I had to get creative. By the way, I now create videos for the UCookbook column of an online magazine called Student Health 101, which provides health and wellness information for college students. I will post my recipes for the magazine at the beginning of each month when the magazine issues are published. Anyway, back to my creativity dilemma. Since I am not a breakfast lover, I decided to create something breakfast-y out of one of my favorite things to eat: sandwiches. Behold, the wafflewich, a breakfast sandwich made from whole grain waffles. And, because everyone has their own preferences, I came up with healthy recipes for both a savory and a sweet wafflewich.



But what good is a wafflewich without a tasty drink to go with it? Ah, that’s where my healthy chai tea latte recipe comes in. If you haven’t tried chai tea before, try it soon! The blend of spices is just wonderful, especially on a cold day.

Sweet WaffleWich
Makes 1 serving

2 frozen whole grain waffles
Almond butter
Fresh seasonal fruit (such as bananas, strawberries, & blueberries)

Toast waffles. Spread desired amount of almond butter on both waffles. Slice the fruit (if need be) and place on top of almond butter. Place one waffle (almond butter side down) on top of the other waffle (almond butter & fruit side up) and enjoy it like a sandwich!

Savory WaffleWich
Makes 1 serving

2 frozen whole grain waffles
Mustard
Reduced sodium turkey slices
Cheddar cheese slices
Apple slices

Toast waffles. Spread desired amount of mustard on both waffles. Place desired number of turkey slices, cheddar cheese, and apple slices on top of mustard. Place one waffle (mustard side down) on top of the other waffle (mustard, turkey, cheese, and apple side up) and enjoy it like a sandwich!

Healthy Chai Tea Latte
Makes 1 drink

1 cup almond milk
1/2 tsp vanilla
1 tsp cinnamon
1 Chai tea bag
Combine almond milk, vanilla, and cinnamon in a microwave-safe mug. Microwave for 2 minutes and place the Chai tea bag in the mug. Enjoy!
