Putting the ‘Fast’ in Breakfast: English Muffin Breakfast Pizzas (& Sushilicious Restaurant Review)

If you haven’t taken your midterms already, they’re probably just around the corner (I know I’m already stressing about my midterms this week!). It’s always important to have a healthy breakfast before taking a test, so I wanted to find a quick and nutritious meal to make before taking my midterms. What’s great about these English muffin pizzas is that you can easily store them in the freezer and quickly microwave in the morning (see my note in the recipe below).

Whole wheat English muffins provide whole grains, fiber, and protein, which are perfect for keeping you full for long periods of time (like during a test). A good rule of thumb to remember is that eating an entire English muffin provides you with the same amount of calories as half a bagel. (more…)

Chili for the Chilly

The chilly fall weather has finally arrived, meaning that it’s chili season according to my records. Actually, I chose to feature this recipe because I’ve been thinking of Halloween earlier than usual this year thanks to UCI’s Shocktoberfest concert and other pre-Halloween festivities. If you’re wondering why I associate chili, out of all dishes, with Halloween, it’s because it’s tradition for my family. I’m not exactly sure why my mom chose chili as our annual Halloween meal, but I have to say, nothing really beats a warm bowl of chili after a chilly night of trick-or-treating.

This recipe isn’t the one my mom follows every Halloween, but it’s a healthier and certainly quicker substitute. (more…)

Yo Quiero Healthy Bell: Ricotta Spinach Soft Tacos

Anyone who knows me well knows I have an obsession with Mexican food, particularly chicken enchiladas suizas. If I could, I would make Mexican food one of the main groups on the food pyramid. Unfortunately, Mexican cuisine is notorious for its high fat content thanks to knock off Mexican fast food chains like Taco Bell (did you know that Taco Bell is headquartered here in Irvine?). While it’s definitely tempting to walk across the street from school for a Mexican food-fix, I’d rather opt for my own healthier, easy-to-make version.

Fancy in a Flash: Smoked Salmon Tartare

Just because you’re a college student doesn’t mean you have to live off instant mac ‘n’ cheese for dinner every night. Why not treat yourself to a fancy dish after a long day of work? After all, you deserve it! When I come from a long day of classes, work, and clubs, this dish never fails to please me when I want something refreshing and flavorful. Best of all, it can be made in a matter of minutes with simple techniques like chopping, dicing, and slicing. Fancy dishes don’t always require hours of preparation or professional cooking skills, so don’t be afraid to try gourmet recipes like this one.

If you asked my family to name my signature dish, they would be quick to say, “Salmon tartare!” Even my youngest brother who can’t stand eating most kinds of fish loves eating this dish. (more…)
