If you haven’t taken your midterms already, they’re probably just around the corner (I know I’m already stressing about my midterms this week!). It’s always important to have a healthy breakfast before taking a test, so I wanted to find a quick and nutritious meal to make before taking my midterms. What’s great about these English muffin pizzas is that you can easily store them in the freezer and quickly microwave in the morning (see my note in the recipe below).
Whole wheat English muffins provide whole grains, fiber, and protein, which are perfect for keeping you full for long periods of time (like during a test). A good rule of thumb to remember is that eating an entire English muffin provides you with the same amount of calories as half a bagel. (more…)
